- Abstract
- The electromagnetic fields influence with various properties and intensities on viscous sacchariferous medium is investigated. Thus effects of a speed-up and delay of crystallization of the specified medium are detected. Affecting on solidifying volume of viscous medium of electrodynamic oscillations, by placing it in electric and magnetic fields, leads to powdering of structure and raise of density of a superficial layer of viscous medium is revealed. Powdering of grain leads to decrease of pores formed on dendrite boundary lines. The results of this investigation can be used at manufacture of confectionery products.
